October brings shorter days, colder waters and the last abundance of the land before the first frost. At Karoline Restaurant, our new seasonal menu follows that changing rhythm - drawing on wild berries, mushrooms, root vegetables, herbs, local produce and the flavours of the northern sea.
Our 5-Course Arctic Journey tells the story of the season through the coast and mountains: from monkfish cheek and Arctic char to Lofoten lamb, finishing with Norwegian plums at their autumn peak.
Alongside it, 5-Course Plant & Place takes a journey through the autumn garden - yellow beets and pickled chanterelles, northern celeriac and fermented blackcurrant, pumpkin with sea buckthorn and gooseberry, and Norwegian apple with cardamom and refreshing fennel sorbet. Nourishing, generous and deeply rooted in place, it captures the warmth and richness we crave as winter approaches.
