Across the country, the day is filled with children’s parades, waving flags, and the sound of marching bands. Families dress in traditional bunad or their finest attire, gathering with friends and neighbours to celebrate in a way that feels both joyful and deeply personal. It’s a day of simple pleasures - hot dogs, cakes, and plenty of ice cream - shared in good company.
In Nusfjord, the celebration takes on a quieter, more intimate rhythm. After the festivities, there’s time to slow down and take it all in. At Landhandleriet Café, guests can step inside for a warm coffee or hot chocolate, paired with a traditional Norwegian sweet - perhaps freshly made waffles - while looking out over the harbour.

In May, as the forests around Nusfjord begin to awaken, a quieter experience invites you to slow down and reconnect.
On a guided foraging walk, you step into the stillness of the surrounding woodland, where the first bright green spruce shoots appear - soft, citrusy, and only available for a short window each spring. These young tips have long been part of Nordic tradition, gathered carefully and respectfully, then transformed into a fragrant syrup that captures the essence of the forest.
There is something deeply calming in the act itself - moving slowly, picking one shoot at a time, surrounded by silence and fresh air. It is a moment of presence, where nature sets the pace.
Back in the village, your foraged ingredients are passed to our chefs, who craft them into a traditional spruce syrup - sweet, aromatic, and reminiscent of the northern forest. In Norway, this syrup has been used for generations, both as a delicacy and as a way to preserve the taste of spring for the months ahead.
