March marks the height of Skrei season in Lofoten, when the Arctic cod arrives at its finest — firm, pristine, and shaped by the cold northern seas.
 
At Karoline restaurant, Chef Roy-Magne presents Three Expressions of Skrei — an exclusive dinner offering celebrating this remarkable seasonal catch through refined technique and bold, balanced flavors.
 
The experience unfolds in three distinctive servings:
  1. Crustade filled with tender skrei cheeks, smoked cod roe, and red ume — delicate, briny, and bright.

  2. Skrei head soup with salt cod croquette, XO sauce, sunflower seeds, and warm spices — deep, comforting, and layered.

  3. Skrei cheeks glazed with honey soy, finished with chicken jus, seaweed and mushroom broth, and annatto oil — rich, umami-driven, and elegant.
Enjoy it as an extraordinary opening to your dinner, or as a refined aperitif paired with selections from our unique wine cellar.
 
Available exclusively throughout March at Nusfjord Village & Resort, this limited seasonal experience invites our in-house guests to savor Skrei at its absolute best — exactly where it belongs.
